Easy internet food.

Once in a while I see a FB post food that makes me want to try it and I thought I'd pass them along. One I tried recently was these baked sweet potatoes. I decided to make a few cuts in them and nuke them first, then put the rest of the slices in (almost to the bottom), drizzle with olive oil and ground salt, and then baked at 350 for a bit. Easy and delicious.
And these eggs over easy inside slices of pepper. You just crack them into the pepper slice and then flip mid-way through.
I served them for breakfast and my son ate them, then said he thought he'd like them better without the peppers. I pointed out that the peppers were kind of the point. I think they'd make a good company breakfast.

  1. I saw a recipe for scalloped sweet potatoes. There is no way I could slice sweet potatoes that thin without professional equipment.

    The eggs look good to me!

    1. That's the thing about nuking them a little first - they are then soft and easy to slice thinly with a knife.

  2. Okay, I have GOT try your sweet potato recommendation because it sounds utterly DELICIOUS! And it blows me away how perfectly even you sliced those potatoes, like a PRO!

    Love how you did the eggs inside the red peppers.

    That last photograph makes me so hungry, and yet I just finished my dinner.

      Food photos often make me hungry, too, no matter how recently I've eaten.

  3. LOL with the comment your son made, but I love the peppers; I'm going to try that soon, also the potato, because I've never met a potato I didn't like :)

    1. I grew up with sweet potatoes always made with butter and brown sugar, but they are good this way, too.

    i've grown to like my sweet potatoes...might have to give that one a try.

  5. I've wondered how the sweet potatoes were made like that. It sounds so delicious. Now I will try them. I'm kind of like your son, not so wild about the pepper idea with my personal egg. However, I do agree it would be a fun breakfast or brunch for guests.
    I don't know why I don't want the pepper with my eggs... I love them along with onions as O'Brians for breakfast.

    1. I tried googling that, but couldn't find out what an O'Brian was. But I often use peppers in omelets, so it's a similar flavor.

  7. Never thought of having eggs in peppers. Sounds like a good combination.

    I love sweet potatoes in curry. Also sweet potato wedges. A very versatile vegetable.

  9. Egg in onion rings I love. Must try the pepper idea. I've done potatoes with the slicing and baked with cheese (sharp) and green onions.

  10. Haven't tried the slices of bell pepper thing, my kids favorite was french bread, hole cut out and egg inserted. I see the pottery cup similar to the ones you were attracted to in an earlier post.

    1. Egg is a frame. Or, as we called them in my family, Superdupers. I make those, too, but usually with whole wheat bread.

      And yes, all my coffee cups are similar to that one.

    1. The funny thing is that he's not a plain eater - he ever since he was a tiny boy he's liked strong tastes - coffee, feta, brie, kalamata olives. He just wasn't wild about this combination.
